There is a free download from Adobe that
enables you to convert RAW files to digital negative raw files (dng).
These when converted, will open in preview and also in Photoshop. It
would have been Ok for use in CS4. This is available for Windows and
Mac.
Your Nikon D7000 is a great camera and
should serve you well. I use its predecessor the Nikon D90 that has
similar attributes.
Your planning of the assignment concerns a
common theme around Lyme Regis and more especially along the
coastline. You have included thorough research of the town from its
inception up to modern times to give the viewer a flavour of its
history and surroundings. The winter season has also given you a
chance to explore the coast when few tourists are around and offers a
photographic line of interest with lighting that affects image
quality. Following the brief, you have submitted images that have
covered standard lighting, high contrast, a couple of examples of low
contrast and low light with mixed lighting.
You have also included the technical data
that accompanies the images and how you arrived at any decision to
combat any alteration to composition and camera adjustments.

The first image has some characteristics of
low contrast but there are some small elements of higher contrast
between the flat rock and sand. It would have looked more flat and
low in contrast if the sun had not been directed on the stones for
example, on a cloudy day. The second image of the boat is quite
convincing as low contrast. You have positioned the boat perfectly
within the frame to be more pleasing to the eye. The misty appearance
of the horizon and the still water gives a very calm feel to the
capture.

These two images are very good examples of
the theme. Both shots gave you an opportunity to use higher ISO
settings and make adjustments in Photoshop to produce these two
striking images. It was wise to use a tripod on long exposures as
with the best will in the world, you cannot steady a camera properly
with exposures of 6 seconds and beyond.
You have demonstrated that you have understood this task and produced some very good examples of the theme. Clearly you have worked hard and I commend your perseverance as you have learned a great deal from this assignment.
